Champagne is pervasively known and loved as the king of sparkling wines. One may not know wine but everyone knows Champagne. And yet while everyone loves to drink it, this delicious sparkling isn’t imagined with food as much as it should. Champagne has the capacity and bubbles to pair with copious cuisines right from hearty everyday dishes to exotic cuisine. This sparkling wine with its creamy texture and trove of citrus and stone fruit tones match nicely with veggies, seafood as well as grilled meats. Nearly all of the Champagnes available in India are dry and light bodied held together by sprightly acidity and creamy texture that match perfectly with raw and grilled seafood, barbeque meats and soft cheeses.

Cava
Spain’s indigenous and majestic sparkling wine Cava is inseperable from the Southern European country’s steeped culinary tradition of Tapas (small plates). While Spain’s full bodied reds are a staple pairing with the local cuisine, Cava more more than holds its own on the dinner table. Produced in the warm climes of Southern Spain unlike Champagne which is a cool climate bubbly, Cava enjoys a dimension of ripe fruit and weight — great attributes for a food wine. So you can pair Cava with a range of grilled and smoked seafood, salads and dishes with herbaceous sauces that complement its fruity palate. The sparkling wine’s juicy acidity is lovely foil to a range of generously flavoured dishes, especially Paella, the traditional Spanish rice dish and could also match our lamb biryanis.

Prosecco
Prosecco has been dubbed the ‘everyday, anytime’ bubbly for good reason. Hands down Italy’s most popular and prolific sparkling wine, Prosecco hails from Veneto in Italy’s north, produced from local grape Glera. Unlike Champagne and Cava, Prosecco is produced using the Charmat method (tank fermentation), making for an easy drinking, fruit forward sparkler popping with citrus and apple flavours and crackling acidity that works perfectly with scrumptious snacks, starters and comfort food. So bring on the bruschetta, calamari, shrimps, crispy chicken and hearty broths. Prosecco is the very definition of a weekend brunch wine and is the ideal accompaniment to a whole buffet of cuisines including spicy Asian and Indian barbeque fare.
