That is what one Mariano Garcia has done with region of Toro where, for the past thirty years, he has mined the barely known region's soils to find the best parcels to plant vines and turn the Tempranillo grapes into full bodied phenomenons. That best describes San Romans, produced from organically farmed Tinta de Toro, an acclaimed clone of Tempranillo. Toro arid summers coupled with sandy soils, makes the vines toil hard to bear fewer grapes, teeming with concentrated flavour that Garcia ferment and then ages for 22 months in French oak. The result is a powerful and elegant red, brimming with black fruit and tannic length that lingers for an eternity.
